Ingredients – Maple Roasted Carrots
Carrots – I just used what I had left over from my lentil curry, which was a little less than half of a 1 lb bag. About three medium carrots.
Maple syrup – Most of the flavor comes from adding maple syrup. It adds sweetness and a fall flair.
Olive oil – Mixing olive oil with the maple syrup coating helps the carrots soften as they roast.
Cinnamon – Warming, pairs great with maple syrup and carrots. Cinnamon is perfect for this side dish.
Cardamom – A wonderfully warm fall spice. You could try a different fall spice like ginger if you didn’t have cardamom.
Sage – Sage is optional, but you can add a little if you want.
How to Make Maple Roasted Carrots
This recipe is super easy to make. Just get out a small ramekin or dish and add two tablespoons olive oil, two tablespoons maple syrup, a half teaspoon cinnamon, a fourth teaspoon cardamom, and, optionally, a pinch of sage. Whisk together with a fork.
Peel and chop the carrots, then rinse them in a colander, and spread them out over a baking sheet. Preheat the oven to 400 degrees and roast the carrots for about 20 minutes, flipping them halfway through with a spatula to ensure even cooking on both sides.

- 3 medium carrots
- 2 tbsps olive oil
- 2 tbsps maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- pinch of sage optional

Dip a brush into the olive oil, maple syrup, and spice mixture and then start brushing it over one side of the carrots using half of the mixture.
